Hotel Cariongo pays tribute to the indigenous culture of Pamplona by naming its restaurants Chitarero and Hulago.
The Chitarero people were the original inhabitants of the mountains surrounding our city. Of medium height, with flat faces, large mouths, thick feet, robust torsos, copper-toned skin, and abundant dark, straight hair, the Chitareros belong to the Chibcha indigenous group.
It is believed that more than 1,500 years before the colonial period, the Chitareros settled in a valley along the Sucre River, which they named Hulago—the indigenous name for the city of Pamplona.
The Chitarero Restaurant offers two distinct dining areas: an indoor space overlooking Plazuela Almeyda and a covered terrace with a view of our beautiful garden. Accessible by elevator, Chitarero is located on the second floor of the hotel. The Hulago Pasticceria is located on the first floor at the hotel's main entrance, featuring an outdoor terrace and an indoor space in the lobby between the reception area and our game room.
Both restaurants offer their diverse menus to both hotel guests and the Pamplona community.
Chitarero Restaurant
In honor of the indigenous people of the Pamplona region, the Chitarero Restaurant embodies the warmth that has always defined the people of Pamplona. Our cuisine features regional dishes prepared with organic ingredients sourced directly from local farms and our own garden.
We also offer dishes from every region of our country as well as international cuisine, providing a diverse culinary experience in a refreshing atmosphere. Enjoy a pleasant atmosphere in our spacious restaurant while you take in the views of the beautiful Eastern Cordillera. Our menu features a wide variety of options, including hot and cold appetizers, a selection of soups and cream soups, Colombian dishes, a variety of salads, vegetarian and vegan options, meats, fish, pasta, rice dishes, cartoccio, desserts, cocktails, wines, digestifs, and more.

From 6:30 a.m. to 8:00 p.m., Monday through Sunday, you'll find unique flavors, a creative atmosphere, and a truly special dish.
